Map the chapters to the lessons
The outline is already written: it is your curriculum. One chapter per lesson, same titles, same order, so a student can move between the video and the book without searching. Each chapter has the same shape — the idea in a page, the exercise, the reflection — because a predictable shape lowers the effort of showing up. Resist adding chapters the course does not have; the workbook's job is to make the course stick, not to be a second course. Design the exercise, not the explanation
The explanation is the video's job. The workbook's job is the thing the student does: a decision to write down, a template to fill, a plan for the week, a list to make, a before-and-after to record. Write each exercise so it can be finished in the time between lessons, and so it produces something the student can look at later — a filled page, not a feeling. Ship it as a product
A course companion is a natural bonus, an upsell and a reason to finish. Export it as a PDF with a cover that matches the course, a table of contents, and page numbers a student can refer to in a Q&A; the DOCX export lets you keep editing it as the course changes. If you sell the book separately, position it as the workbook for people who prefer to work through material on their own, and price it as a product rather than as notes. Should the workbook include the course content?+

For a workbook, a PDF with fixed pages — the writing space and the page references matter. An EPUB reflows and the exercises lose their shape.
